10 essentials
Those who know it best speak… our shepherds
1. Bat
Go up to the San Adrián tunnel
Declared a UNESCO heritage site
The trail up to San Adrián is a pleasant walk. The tunnel became a famous legend in the Middle Ages but now is a great spot for getting a panoramic view of our mountains. You can walk on a two-hour circular path or, even easier, take the car and hike the last 20 minutes to the 70 metre-long tunnel.

“San Adrián is an awesome place, a natural cave, not man made, with lots of history. It has always been a highly transited area, but the cave seems to come out of nowhere”.
Jesús Aranburu,
Shepherd and co-ownner of the J. Aranburu dairy farm

2. Bi
Walk, breath, listen, watch…
Walk around our 2 National Parks
Both Aralar and Aizkorri-Aratz National Parks preserve and showcase the most spectacular natural areas of the Basque Highlands, offering you more than 50 different trails.

“Everyone has his own opinion, Aralar Natural Park is my little paradise. It is not just a place for nice scenery, it is teeming with life. During the summer there is plenty of livestock and some forty shepherds –on the Gipuzkoa side- but encountering someone is not so easy. Only around the Txindoki area do I run into the occasional hiker”
Joseba Insausti,
Shepherd in Aralar Natural Park & producer of Idiazabal cheese in Otatza dairy farm (Ordizia)

3. Hiru
Experience rural life
Meet our shepherds & try our Idiazabal cheese right from the source
Get a fascinating look into how our shepherds raise their sheep and make the extraordinary Idiazabal cheese. Sheepworld is amazing, and our native Basque sheep are small and friendly. Book your visit to a dairy farm organised through the Cheese Tasting and Interpretation Centre.

“You will see a family that lives off sheepherding, farming the land, raising livestock. Behind all of these is a culture that has been passed down from father to son, a language: Euskera“.
Ander Barandiaran,
Shepherd of Gaztañaditxulo dairy farm

4. Lau
Head to a cider house
Sample ciders made on site!
Experience a Basque traditional lunch in one of our 7 cider houses. Goierri produces an excellent variety of cider. Our cider houses and restaurants get to business, offering traditional Basque cuisine including Idiazabal cheese, t-bone steak (we call it txuleton), amazing vegetables, to name a few.

“I like to eat Idiazabal with cider. The cheese must be produced by a shepherd, not factory-made”.
Julen Arburua,
a young shepherd and Idiazabal cheese super-champion of Kortaria dairy farm (Navarra)

In search of the Goierri skyline
By car
