Idiazabal cheese

“Old as Euskal Herria, ancient as its way of life, generous as its people”. This cheese is made through a thousand-year tradition, having its own denomination of origin since for 30 years now. It takes its name from one of our villages, Idiazabal, being this the first town related to latxa sheep cheese. You are in the land of Idiazabal cheese, but try and have it with a glass of natural cider or txakoli… you will love it! This cheese is completely natural, so don’t worry about eating the rind too! Remember, 13,000€ were paid at auction for half of this cheese… no wonder world-famous Basque chefs are big fans of this product and use it in their recipes!

When you hear someone shouting txotx! don’t think twice: get up and follow the queue to get yourself some natural cider directly served from the barrell -kupela-. Talk to the cider man while you try different kinds of cider, order the traditional menu… Suddenly, conversation grows and you find yourself sharing much more than words: the actual feeling of experiencing a Basque tradition.

Ordizia Market is a reference for farmers throughout the regions in the Basque Country and a showcase for local, seasonal produce. There you will find family dynasties like Agapito Agarmendia’s, representing the fifth generation of his family, the Izagirre family from "Montes" farm, the Arizmendi family…none of them skip a Wednesday in Ordizia. Basque gastronomy is devoted to the products of the region. Cultivate sight and smell!

DIET AND GASTRONOMY CENTRE

D'ELIKATUZ

d’Elikatuz Centre encourages research on nutrition, food and gastronomy. It gives information about Goierri’s gastronomy, promotes and organises information and campaigns to raise awareness on food safety and quality products in the Basque Country.

INTERPRETATION AND CHEESE TASTING CENTRE IDIAZABAL

Inside the Museum of Cheese there is an information desk where you will get info about the town of Idiazabal and the region of Goierri. You will be able to join a guided tour, see the shepher hutv(a traditional shepherd’s hut replica) and cheese houses like J. Aramburu and Gaztañaditxulo, where you will get familiar with the Idiazabal cheese-making process. The office speaks Euskera, Spanish, English, French and Catalan.

Though you are in the land of Idiazabal cheese, get ready to find some other delicious local products that you can only eat here in Goierri! Try Beasain’s black pudding, very tasty sausages with a hint of leek and spices. Try mondeju, a delicious sausage obtained from local sheep. Our local baking is also delightful: Segura cake and walnut pastries from Zegama are a local specialty!
